What is the perfect roast dinner?

We went out for Sunday lunch today and had a really nice roast dinner. Most pub roasts I have had were not as good as making one yourself, but easier and time saving. We had roast potatoes, cauliflower cheese, carrots, green beans, onion gravy, peas, yorkshire puddings, stuffing balls, gammon, turkey and beef. I have to say it was not bad and the only thing that could have been improved was the beef. It was cooked fine, although I prefer my beef medium rare.
I just wanted to know what people thought would be the perfect roast dinner and if they would make it them selves?
